About once every other week for the past two months, the LaBouffs will invite me (and occasionally Nick, when he has time for us) over to dinner.
They are both amazing chefs (although Rae claims she's "just following recipes") and so I always take them up on their offer.
I think they half like the company and half feel sorry for me because I have no family anywhere close.
(I'll take the pity invitation any day!)
Last Sunday, Rae made the most amaaazing roasted salmon dish with spinach, feta, and ricotta.
We had a bit of trouble skinning the salmon, even after we watched a YouTube video of how to do it. It became increasingly easier once we switched to a better knife, but check out Jordan's attempt:
Then, Rae put a layer of spinach, a layer of 1 cup of ricotta and 1 cup of feta mixed together, then another layer of spinach.
She rolled it up length-wise, then salt and peppered again and added some oregano and dill.
She popped it in the oven at 450F for 20-ish minutes and it came out like perfection.
Afterwards, we decided to roast s'mores in their fireplace.
Rae's very diligent about her fires and it's hilarious to watch because she likes to get up every 10 minutes to poke around the fire. I'm willing to be patient, however, because the s'mores were sooo good!
I loooove marshmallows.
Jordan is even more excited about marshmallows.
So good, right? Rae even busted out her stash of Godiva chocolate for the s'mores, and life was good. (Limited pics of Rae because she hates photos.)
I forget what happened here, but I love the look of pure joy on Jordan's face.
We're serious about our s'mores.

Looks delicious! And I LOVE Jordan's artistic photo, and no...I don't have to say that just because it's of you! Pity invitations, pity grades...have you no shame?
So, are you the one who got the marshmallow sticks at the family Christmas exchange? BTW in Jordan's artistic photo, you REALLY look like your mom when she was in her 20's.

I don't even like salmon but that looks delicious! And your smores reminded me that I received some of the best news today. Korea now has graham crackers! We could have a blogging smores-gesporg. (Sound it out... it might make more sense) Love reading your blog!
