Thursday Thoughts v.36


Happy Thursday y'all! For some reason, I've had the busiest week ever and yet it's also been an amazing one. Plus September in Texas means the weather has been gorgeous, so you can't beat that!

Tuesday was my bestie Liz's birthday, and since she has Crohn's disease and she can't have gluten, Casey, her mom Cathy, and I all tried our own gluten-free recipes. I contacted my friend Amanda, who always has gluten-free or dairy-free recipes she's trying. She set me up with a mint chocolate cupcake recipe that is made out of black beans instead of any sort of flour. I was hesitant to try them (especially after I made them and saw the ingredients), but it turned out fabulous. My favorite part was the non-dairy-free mint cream cheese frosting I made (just in case the cupcakes weren't good).

I drove to dinner with Liz's parents because I needed somewhere to spend two hours instead of driving back home to Waco (Liz lives over by where I teach on Tuesdays/Thursdays). In the early afternoon, I helped Cathy make frosting for her gluten-free cupcakes (also not bad, but hers had practically 2384 different types of gluten-free flour substitute so it took forever to bake) which was a hilarious incident on its own. On the way home, however, they took me out to their barn and showed me their baby kitties!

This weekend, I have fun plans with Neely and Stephanie for a girls' night at Steph's place in Waco. I'm looking forward to giggling, Mean Girls, and plenty of wine.

This past week, I noticed Syndal had a great idea for a Monday link-up called "This Weekend, I..." (or Twitter hashtag #TWI). I loved it so much that I convinced her to make it a weekly link-up, so we're going to be hosting it! It's a good way to tell your readers about your weekend, plus I've been looking for a new Monday link-up so this should be perfect!

That baby kitten is the sweetest, I just want to cuddle it!

I always see recipes for black beans in desserts and I am so scared to try it. I'm a black bean fan, but in my Mexican food! I'm not sure I could do it in a cupcake!

Also no plans this weekend, just taking it easy hopefully. Hubby brought me home a new play toy and we are going to work on it this weekend and put in the apartment somewhere.

My mom doesn't eat gluten and just recently she tried out a recipe for cake with black beans too! Crazy, I thought it tasted fine
